Do you know anyone that does not love waffles? 🙂 

This recipe makes my kids happy, and gives me satisfaction because I make my waffles from healthy millet, amaranth and tapioca.

Ingredients (for 10-12 waffles):
– 200 g of millet
– 100 g of tapioca
– 2 tbsps of linseed
– 50 g of expanded amaranth
– 1 egg
– 50 ml of sparkling water
– 100 ml of rice milk
– 1 pinch of salt
– 1 tbsp of agave syrup
– 4 tbsps of coconut oil

Roast millet in a pen on low fire, for approximately 15 minutes till golden brown and smells nuts.
Blend millet and linseed in a blender. Then add tapioca, amaranth, yolk, milk and oil. Stir till combined.

Beat egg white with salt into rigid foam. Add the foam to the mixture and stir gently.

Bake the waffles in a waffles maker approximately 8 minutes.
