“Modern” British banana pancakes

The first time I met my friend Sophie she was really interested in healthy Polish ingredients. Now, she is cooking a lot of millet and buckwheat-:) She likes to experiment  in the kitchen and to find new simple dishes to make her hectic daily routine easier. Sophie’s extremely simple banana pancakes are a favourite of my older son.

Ingredients:

  • 2 bananas
  • 4 tsps of oat flakes
  • 2 tsps of coconut oil

Peel and mash the fruit. Then add the oat flakes and mix all together.

Grease a frying pan and fry the small pancakes (using tablespoons of the mixture).

If you prefer the banana cakes, place the small scoops of the mixture in the square baking pan lined with parchment and bake them for approximately 20 minutes at 180-190 C.
