Healthy, organic cooking also means, you should not waste food, but use all ingredients in a rational way.
Let’s make a delicious pate of chicken meat and veggies, which we used ealier for broth cooking. Add a chicken or goose liver, some people don’t like goose liver’s taste, tough it is almost not perceptible in a pate. In addition, the liver is a good source of iron.
Ingredients:
- meat and veggies (carrots, parsley root, onion, celery)
- 1 fresh poultry liver
- 1 bunch of parsley
- a couple of celery stems
- 2 onions
- 4 cloves of garlic
- 1 small curcuma root
- 1 tbsp sweet red paprika powder
- 1 tspsweet smoked red paprika powder
- 1 tsp salt
- approx 80 ml broth (2 ½ -3 ounces)
- 2 tbsps brown quinoa and 2 tbsps white quinoa
- approx 100 ml of coconut or almond milk (3-3 ½ ounces)
Soak liver overnight in the coconut or almond milk. Wash it well with water.
Mix all ingredients, except quinoa, in a blender. Add quinoa and stir all together.
Bake pate at the temperature 200 C approx 45 minutes until golden brown.
